Chick Peas and Cottage Cheese Salad

Ingredients:

  • Chick Peas - 1 cup
  • Cottage Cheese (Paneer) - 200 grams
  • Fresh Coriander - 1 small bunch
  • Butter - 20 grams
  • Salt - To taste
  • Freshly ground pepper - To taste

Method: 

Advanced Prep - Soak chick peas overnight in water. 

Prep - 
  • Pressure cook the soaked Chick Peas to the softness you like with one teaspoon of Salt.
  • Dice Cottage Cheese (Paneer) into 0.5 inch cubes.
  • Heat butter in a wok on a slow flame, add freshly ground pepper and diced cottage cheese. Mix well so as to coat the butter and pepper all over the cubes. 
  • Cook with lid for 1 minute, then stir and cook for another minute. 
  • Finely chop coriander leaves and keep.
Cook -
  • Take a bowl add cottage cheese cube from the wok.
  • Drain excess water from the cooked chick peas and add to the bowl.
  • Add chopped coriander to the bowl and toss well.
  • Adjust seasoning and pepper to taste.
Your Chick Peas and Cottage Cheese salad is ready! Goes well as a side dish or even a meal if you are on a diet and want to avoid direct carbs.
